Caramelized Onion Focaccia

You can use whatever cheese you like in this easy recipe. Make sure to cook the onions until browned but not burned, as this cooking process brings out the sugars in the onions and adds a tantalizing flavor.

Prep Time: 15 minutes

Cook Time: 40 minutes

Ingredients:

  • 2 Tbsp. butter
  • 1 Tbsp. olive oil
  • 2 onions, chopped
  • salt and pepper to taste
  • 8 deli slices provolone cheese
  • 1 deli focaccia or Boboli® cheese crust

Preparation:

Melt butter and olive oil in heavy skillet. Cook onions in butter for 15-20 minutes, stirring frequently, until onions are browned and caramelized. Sprinkle with salt and pepper and stir.

Heat oven to 375 degrees. Place focaccia on a foil lined ungreased cookie sheet and place half the cheese on the focaccia. Top with onions and remaining cheese slices. Bake for 15-20 minutes until cheese is melted. Cool 5 minutes, and then cut into wedges to serve.
