Ingredients:
- 1-1/2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 1-1/4 cups buttermilk
- 2 tablespoons butter
- 1 egg
- Solid shortening for pan
Preparation:
Sift all the dry ingredients into a large bowl. In small saucepan, combine buttermilk and butter; heat over low heat just until butter starts to melt; stir and remove from heat.Quickly beat egg into the buttermilk mixture, then pour over dry ingredients. Stir with a whisk just until the batter is blended. If there are a few lumps, that's okay. Let batter stand for 10 minutes.
Heat griddle to 350 degrees F or heat over medium heat. Rub with a little bit of solid shortening and pour batter by 1/4 cup measures onto griddle. Cook on first side until edges look dry and bubbles form and just begin to burst, about 2-3 minutes. Carefully flip over and cook for 1-2 minutes on second side. Serve immediately. Makes about 6-8 pancakes.
