Bacon Tater Crockpot Breakfast

This delicious breakfast casserole recipe cooks overnight in your crockpot. I love the combination of tater tots, Canadian bacon, onion, and egg.

Prep Time: 15 minutes

Cook Time: 7 hours

Total Time: 7 hours, 15 minutes

Yield: 6-8 servings

Ingredients:

  • 1 pound package frozen tater tot potatoes
  • 1/2 pound diced Canadian bacon
  • 2 onions, chopped
  • 1-1/2 cups shredded Cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 6 eggs
  • 1/2 cup whole milk
  • 2 tablespoons flour
  • salt and pepper to taste

Preparation:

In 4-5 quart crockpot, layer ingredients in order: one third of the tater tots, bacon, onions, and cheeses. Repeat layers two more times, ending with cheeses.

In a medium mixing bowl, combine eggs, milk, and flour and beat with whisk or egg beater until combined. Season with salt and pepper to taste. Pour mixture over layers in crockpot. Cover crockpot and cook on low for 6-8 hours.

Note: Please make sure you know your crockpot before you cook this recipe. If it cooks hotter - if food is done before the time called for in most recipes, you have a hot crockpot. Check this recipe at 5 hours; it may even be done then. Newer crockpots cook much hotter than older models, so you need to adjust your recipes accordingly. The final temperature of the food should be 165 degrees F.

I made this on a camping trip (in camper) and tripled the recipe over two different crockpots. It turned out really, really good. I used about 2 onions in the whole 3X of the recipe, and either my onions were really hot or something. It needed a third of what I put in them. I also used frozen hashbrown potatoes for the tater tots and used pre-diced ham and fresh bacon bits instead of the Canadian bacon. The result was a really beautiful and great tasting breakfast for about 30 people. Thank you so much!!
