Fluffy Pancakes

Fluffy Pancakes are just plain delicious. The egg is separated and the white beaten to add even more air to a classic pancake batter.

Prep Time: 15 minutes

Cook Time: 5 minutes

Ingredients:

  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup whole milk
  • 2 tablespoons butter
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 1 egg white

Preparation:

Sift flour, baking powder, and salt into a medium bowl. In small saucepan, combine milk and butter; heat just until butter melts. Pour into small bowl and beat in egg yolk and vanilla.

In another small bowl, beat egg white until stiff peaks form. Stir the egg yolk mixture into the dry ingredients just until barely combined, then fold in the egg white.

Have a griddle heating while you're beating the egg whites. Grease with a tiny bit of solid shortening. Pour batter by 1/4 cup measures onto the hot griddle. Cook until edges look dry and bubbles form and start to burst on surface, about 2-3 minutes. Flip over and cook for 1-2 minutes on second side until lightly browned. Serve immediately. Makes about 6-8 pancakes
