Hash Brown Omelet

This simple and easy recipe is so delicious.

Prep Time: 15 minutes

Cook Time: 20 minutes

Ingredients:

  • 6 slices bacon
  • 1/4 cup olive oil
  • 4 cups frozen hash brown potatoes
  • 6 eggs
  • 2 Tbsp. milk
  • 1/2 tsp. salt
  • dash pepper
  • 1 cup shredded Cheddar cheese
  • 1/2 cup shredded Havarti cheese
  • 2 Tbsp. grated Parmesan cheese

Preparation:

Cook bacon in large skillet until brown and crisp. Remove from pan and drain on paper towels, then crumble and reserve. Drain most of bacon fat out of skillet. Add 1 Tbsp. olive oil to skillet and add potatoes. Cook and stir until browned and crisp. Remove from pan and set aside.

In large bowl, beat together eggs, milk, salt and pepper until combined. Add remaining 3 Tbsp. olive oil to same skillet and pour in egg mixture. Cook over low heat, tilting pan and lifting egg mixture as it sets to allow uncooked portion to flow underneath.

When mixture is set and bottom is browned, spread cooked potatoes over and sprinkle with cheeses and reserved bacon. Cook under broiler for 3-4 minutes until cheese is melted and bubbly. 4 servings
