Apple Snack Cake

This simple one bowl cake recipe is perfect for snacking. There's no frosting - a cinnamon streusel is sprinkled over the cake before it's baked.

Prep Time: 20 minutes

Cook Time: 50 minutes

Ingredients:

  • 2 cups sugar
  • 2 cups flour
  • 1/2 tsp. salt
  • 2 tsp. baking soda
  • 1/8 tsp. cloves
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 cup vegetable oil
  • 2 eggs, beaten
  • 1 tsp. vanilla
  • 1 cup chopped walnuts
  • 4 cups diced, peeled apples
  • 3/4 cup brown sugar
  • 2 Tbsp. flour
  • 1/2 tsp. cinnamon
  • 3 Tbsp. butter

Preparation:

Preheat oven to 350 degrees F. Grease and flour a 9x13" pan and set aside.

In large bowl, combine 2 cups sugar, 2 cups flour, salt, baking soda, cloves, 1 tsp. cinnamon, and nutmeg and mix well. Stir in oil, eggs, vanilla, nuts, and apples and mix well. Spread batter into prepared pan.

In small bowl, combine brown sugar, 2 Tbsp. flour, cinnamon, and butter until crumbly. Sprinkle over batter in pan. Bake at 350 degrees F for 50-60 minutes or until top springs back when lightly touched and sides begin to pull away from pan. Cool completely on wire rack. 12 servings
