Genoise Cake

This simple, delicious cake recipe is from France. It's classic, versatile, and buttery.

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup flour
  • 1./2 tsp. baking powder
  • 1/2 tsp. vanilla

Preparation:

Preheat oven to 350 degrees. In a large bowl, cream together butter and sugar until light and fluffy. Beat in the eggs at high speed until very light and fluffy. Sift together flour and baking powder, then fold into batter. Stir in vanilla. Pour batter into a buttered 8" square cake pan and bake at 350 degrees for 20-30 minutes, until light golden brown, and cake begins to pull away from sides of pan.

genoise, Guest bricolier

The best way to bake is to use a scale and use the metric system. I know that for the genoise the proportion are for one egg: 30 grames of flour, 30 grames of sugar and butter is optional. Example for a cake that I uses 4 eggs I need 120 grames of flour and 120 grams of sugar. First mix the sugar and eggs for about 10 minutes over double boiler until the mixture is light. Contimue to mix until cold. Add gently the sifted flour and you are ready with the mix. With the same procedure beat only the egg yolk and sugar for about 10 minutes. Then add the flour. With the egg whites make a meringue and add gently to mixture. This will give you lady fingers.
