Ingredients:
- 2 cups flour
- 1 cup graham cracker crumbs
- 1 cup brown sugar
- 1/2 cup sugar
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 1 cup butter, softened
- 1 cup orange juice
- 3 eggs
- 1 cup chopped walnuts
- 1 (8 ounce) package cream cheese, softened
- 1/4 cup caramel ice cream topping
- 1/4 cup butter, softened
- 3-1/2 cups powdered sugar
Preparation:
Preheat oven to 350 degrees F. Spray a 9x13" pan with a nonstick baking spray with flour; set aside. In large mixing bowl, place all ingredients except for nuts, cream cheese, ice cream topping, 1/4 cup butter, and powdered sugar. Mix until combined, then beat 2 minutes on medium speed. Stir in chopped walnuts and pour into prepared pan.Bake at 350 degrees F for 25-35 minutes until cake is dark golden brown and set. Cool completely on wire rack. When cake is cool, combine cream cheese with caramel ice cream topping and butter; beat well. Add 1-1/2 cups powdered sugar. Beat well and add remaining powdered sugar until frosting is soft and spoonable. Frost cooled cake; store in refrigerator.
