This simple cake is perfect for bake sales or back to school.

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 50 minutes

Yield: 16 servings

Ingredients:

  • 2 cups flour
  • 1 cup graham cracker crumbs
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1 cup butter, softened
  • 1 cup orange juice
  • 3 eggs
  • 1 cup chopped walnuts
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup caramel ice cream topping
  • 1/4 cup butter, softened
  • 3-1/2 cups powdered sugar

Preparation:

Preheat oven to 350 degrees F. Spray a 9x13" pan with a nonstick baking spray with flour; set aside. In large mixing bowl, place all ingredients except for nuts, cream cheese, ice cream topping, 1/4 cup butter, and powdered sugar. Mix until combined, then beat 2 minutes on medium speed. Stir in chopped walnuts and pour into prepared pan.

Bake at 350 degrees F for 25-35 minutes until cake is dark golden brown and set. Cool completely on wire rack. When cake is cool, combine cream cheese with caramel ice cream topping and butter; beat well. Add 1-1/2 cups powdered sugar. Beat well and add remaining powdered sugar until frosting is soft and spoonable. Frost cooled cake; store in refrigerator.

I'm glad I tried this recipe :), Member mysterystew

The guys in my house prefer their cakes without frosting (I don't agree, but I'm outnumbered, hehe) so I served the cake plain. It was moist and delicious, and got a thumbs up from hubby and my teenage son. It was quite simple to make, using regular ingredients I had on hand - thats a definite plus. This will make a great after school snack, and will work nicely in packed lunches as well. I think it would also make a nice take-along dessert/hostess gift, although in that case, I would frost it for a fancier/more festive look. Great recipe - thank you !!
