Pear Cake with Caramel Sauce

This cake is a takeoff on a Bake Off recipe; I think it's better and easier! Cream Cheese Frosting makes the biggest difference.

Prep Time: 15 minutes

Cook Time: 30 minutes

Ingredients:

  • 1 (15 ounce) pear halves
  • 1 (18 ounce) package white cake mix
  • 1/3 cup oil
  • 3 egg whites
  • Cream Cheese Frosting
  • 1 cup caramel ice cream topping

Preparation:

Preheat oven to 350 degrees F. Spray a 9x13" pan with nonstick baking spray containing flour and set aside. Drain the can of pears, reserving 1/3 cup pear liquid. Place pears and reserved liquid in food processor or blender; process or blend until smooth. Place in large bowl with cake mix, oil, and egg whites. Mix until combined, then beat at high speed for 2 minutes. Spoon into prepared pan.

Bake for 28-33 minutes or until cake springs back when lightly touched in center, is golden brown, and begins to pull away from sides of pan. Cool completely on wire rack.

Spread with Cream Cheese Frosting. When ready to serve, cut into squares; drizzle each square with some ice cream caramel topping. Serves 16
