Crockpot Chocolate Cashew Clusters

Yum - this candy recipe is super simple. Think about using other kinds of nuts too! The nuts toast slightly as the chocolate melts. You can find vanilla bark or almond bark in confectionary stores and in candy making outlets and in the baking aisle of most supermarkets.

Prep Time: 15 minutes

Cook Time: 2 hours

Ingredients:

  • 1 lb. salted whole cashews
  • 1 lb. salted cashew pieces
  • 12 oz. semisweet chocolate chips
  • 8 oz. German sweet chocolate, chopped
  • 4 oz. milk chocolate, chopped
  • 2 lbs. vanilla bark or almond bark, chopped

Preparation:

Place nuts in bottom of 3 quart crockpot and stir to mix. Add all of the chocolate. Cover and cook on LOW for 1-1/2 to 2 hours until chocolate is melted, stirring once during cooking times. Stir well, then drop spoonfuls of the mixture onto waxed paper or parchment paper lined cookie sheets. Refrigerate until set.
