This recipe needs a bit of care. It needs to be stirred constantly, and I mean constantly, while the sugar and milk are boiling. But if you do that, you'll have some of the best fudge you have ever eaten. It was developed back when evaporated milk cans were 15 ounces. Now they're usually 13 ounces, so I added some regular milk to compensate, so the sugar will dissolve completely.
Prep Time: 15 minutes
Cook Time: 25 minutes
Ingredients:
- 4 cups sugar
- 12 oz. can evaporated milk
- 1/4 cup milk
- 1 cup butter
- 6 oz. pkg. semisweet chocolate chips
- 12 oz. pkg. semisweet chocolate chips
- 1 oz. square unsweetened chocolate, chopped
- 2 tsp. vanilla
- 1 cup chopped walnuts, if desired
Preparation:
Butter a 13x9" pan and set aside. In heavy saucepan, combine sugar, evaporated milk, and milk. Bring to a boil, stirring constantly - and I mean CONSTANTLY. This mixture burns very easily. You may notice little brown bits starting to float in the mixture - that's okay. As long as the bits aren't black, you'll be fine. Just stir harder! When the mixture comes to a boil, boil for 10 minutes, stirring, yes, constantly.
Place remaining ingredients in a large bowl. When the sugar mixture has boiled for 10 minutes, pour it into the large bowl over the other ingredients. Beat and blend until mixture is melted and smooth. Pour into prepared pan, and let cool. Cover and let sit for 12 hours before cutting.
