Crockpot Peanut Chicken

This super simple recipe is packed full of flavor.

Prep Time: 10 minutes

Cook Time: 5 hours

Total Time: 5 hours, 10 minutes

Yield: 6 servings

Ingredients:

  • 3 pounds boneless, skinless chicken breasts
  • 1/2 cup peanut butter
  • 1/2 cup orange juice
  • 1 cup chicken broth
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon ground ginger
  • 1/8 teaspoon pepper
  • 1/4 teaspoon garlic powder

Preparation:

Combine all ingredients in 4 quart crockpot; mix well. Cover and cook on low for 5-8 hours or until chicken is tender and thoroughly cooked. Serve with hot cooked rice or noodles.

If you have a newer hotter cooking crockpot, check the chicken after 4-1/2 hours. The peanut butter can burn easily, so watch it.
