Any leftover cooked and cubed chicken or turkey can be used in this easy stir fry recipe.

Ingredients:
- 1 Tbsp. olive oil
- 16 oz. pkg. frozen broccoli and carrot combo
- 2 garlic cloves, minced
- 1/4 cup water
- 2 fried chicken breasts, cubed
- 1/2 cup apricot jam
- 1 Tbsp. lemon juice
- 1/4 tsp. salt
- dash white pepper
- 1/2 tsp. dried thyme leaves
Preparation:
Heat oil in nonstick skillet and add frozen vegetables and garlic. Stir fry for 1 minute. Add water and cover. Reduce heat to medium and cook for 6-8 minutes until vegetables are crisp tender. Add chicken to skillet.
In small bowl, combine apricot jam, lemon juice, salt, pepper, and thyme. Pour over chicken mixture and stir to mix well. Cook for 2-4 minutes longer until chicken is hot and serve over hot cooked rice. 4 servings
