Baked Chicken with Apricots

You can vary this recipe by using different fruits. Try dried pineapple with fresh, or dried cherries with fresh cherries. You can substitute canned apricots for the fresh ones easily.

Prep Time: 25 minutes

Cook Time: 30 minutes

Total Time: 55 minutes

Yield: Serves 8


  • 2 cups chopped apricots OR 1 (15-oz.) can apricots, drained
  • 1/3 cup chopped dried apricots
  • 1/4 cup minced onion
  • 2 cloves garlic, minced
  • 1/4 cup orange juice
  • 2 Tbsp. honey
  • 1 Tbsp. brown sugar
  • 1 tsp. grated fresh ginger root
  • 1/2 tsp. salt
  • 2 tsp. honey mustard
  • 2 lb. chicken breasts, bone in, skin on
  • salt and pepper to taste


Combine fresh apricots with dried apricots, onion, garlic, orange juice, honey, brown sugar, ginger, salt, and mustard in heavy saucepan. Bring to a boil, then lower the heat and simmer for 10 minutes. Remove fruit mixture from heat and let cool for 1 hour.

Heat oven to 350 degrees. Season chicken with salt and pepper and place in a single layer, skin side down, in a glass baking dish. Spread apricot mixture on top. Bake for 15 minutes, then turn chicken and baste with the fruit mixture in the pan. Increase temperature to 425 degrees and bake 15 minutes longer, or until chicken is thoroughly cooked to 160 degrees F.

we liked this recipe very much. our toddler was chowing down, instead of her usual smearing it everywhere, proof that it is very tasty! we did add a bit of cornstarch to the fruit sauce, maybe a Tbsp to gel it up some and lessen the hour cool time, before baking on top of the chicken. Also i'm not usually a ginger person... but this was nice. It's a nice combination with the apricot and it gives it a nice crisp/fresh smell... mmm... we served this over rice & are looking forward to enjoying leftovers for a couple of days :)
