Baked Lemon Chicken is a super quick and easy recipe. Note: the chicken will not brown. If you want browned chicken, broil the cooked chicken for a minute or two before serving.

Ingredients:
- 2 tablespoons olive oil
- 1 tablespoon butter, melted
- 1/2 cup lemon juice
- 1/4 cup chicken broth
- 2 cloves garlic, minced, if desired
- 1 teaspoon finely grated lemon zest
- 6 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 lemon, thinly sliced
Preparation:
In 2-1/2 quart casserole dish, combine olive oil, butter, lemon juice, chicken broth, garlic, and lemon zest. Season chicken with salt and pepper to taste and place in lemon juice mixture; turn to coat.
Cover and refrigerate for 2-6 hours. When ready to eat, preheat oven to 400 degrees F. Thinly slice a lemon and place a slice on top of each chicken breast. Bake chicken, uncovered, for 20-30 minutes, basting once with liquid in casserole, until chicken registers 160 degrees F. Serve with remaining lemon slices.
