Buttermilk Fried Chicken Coating Recipe

This simple recipe adds moistness and flavor to plain boneless, skinless chicken breasts.

Prep Time: 10 minutes

Cook Time: 23 minutes

Total Time: 33 minutes

Ingredients:

  • 3 Tbsp. flour
  • 1-1/2 tsp. lemon pepper
  • 1/3 cup buttermilk
  • 1 cup cornflake crumbs
  • 3 Tbsp. cornmeal
  • 4 boneless, skinless chicken breasts
  • 2 Tbsp. melted butter

Preparation:

Combine flour and lemon pepper seasoning in shallow dish. Place buttermilk in another dish. In third dish, mix cornflake crumbs and cornmeal. Dip boneless, skinless chicken in flour mixture, then dip in buttermilk, and finally in crumb mixture. Then drizzle with melted butter and bake at 400 degrees F for 18-24 minutes.

I made this for supper tonight very easy to put together.Turned out moist and the coating was crunchy.I think I would add a couple more spices to the seasoning to add a little more flavour. Loved that the coating stayed on the chicken. Also I cooked the chicken at 400F. for about 40 minutes.
