Chicken Bruschetta

Chicken Bruschetta

Linda Larsen
Bruschetta is a typical Italian appetizer. In this recipe, bruschetta toppings are added to grilled chicken breasts for a main dish.

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Yield: Serves 6

  • 6 boneless skinless chicken breast halves
  • 1 Tbsp. olive oil
  • 1/4 tsp. garlic salt
  • 3 plum tomatoes, chopped
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1/2 tsp. salt
  • 1/8 tsp. white pepper
  • 1 Tbsp. lemon juice
  • 1/4 cup grated Parmesan cheese

Prepare and preheat grill. Brush chicken with olive oil and sprinkle with garlic salt. Place on grill, cover, and cook for 10-12 minutes until chicken is almost done, turning once.

Meanwhile, combine remaining ingredients except Parmesan cheese in a small bowl and mix well. When chicken is almost cooked, top each piece with some of the tomato mixture and sprinkle with cheese. Cover grill and cook 2-5 minutes longer until chicken is thoroughly cooked.

Note: There is nothing wrong with the amount of basil in this recipe. The recipes calls for fresh basil, not dried. The amount in the recipe works out to about a tablespoon per serving, which is a standard amount for bruschetta. For instance, see Giada De Laurentiis' Tomato Mozzarella and Basil Bruschetta, which uses a whole cup.

Really easy and good, Guest

This is now one of my favorite recipes for chicken breasts. The cool topping is so delicious on the hot chicken. I love the amount of basil in the recipe, and I often add more garlic. Kudos!
