Ingredients:
- 6 boneless skinless chicken breast halves
- 1 Tbsp. olive oil
- 1/4 tsp. garlic salt
- 3 plum tomatoes, chopped
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- 1/2 tsp. salt
- 1/8 tsp. white pepper
- 1 Tbsp. lemon juice
- 1/4 cup grated Parmesan cheese
Preparation:
Meanwhile, combine remaining ingredients except Parmesan cheese in a small bowl and mix well. When chicken is almost cooked, top each piece with some of the tomato mixture and sprinkle with cheese. Cover grill and cook 2-5 minutes longer until chicken is thoroughly cooked.
Note: There is nothing wrong with the amount of basil in this recipe. The recipes calls for fresh basil, not dried. The amount in the recipe works out to about a tablespoon per serving, which is a standard amount for bruschetta.
