Ingredients:
- 1 (16-ounce) package linguine pasta
- 2 tablespoons butter
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 5 boneless, skinless chicken breasts, cubed
- 1/2 teaspoon salt
- 1/8 teaspoon white pepper
- 1 cup heavy cream
- 1 (9-ounce) package basil pesto
- 1/4 cup lemon juice
- 1 teaspoon grated lemon zest
- 2 cups frozen baby peas
- 1/3 cup grated Parmesan cheese
Preparation:
Cook and stir over medium heat until chicken is almost cooked, about 4-6 minutes. Stir in cream and bring to a simmer.
Add pasta to boiling water; cook until al dente according to package directions.
When pasta is done, drain well and add with remaining ingredients to chicken mixture; toss over medium heat until chicken is thoroughly cooked and mixture is hot. Serve immediately. Serves 6
