Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1/8 teaspoon white pepper
- 1/3 cup butter
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons lemon juice
- 1/2 teaspoon lemon peel
- 2 tablespoons chopped fresh parsley or basil
Preparation:
In large skillet, melt butter over low heat. Add onion and garlic; cook until tender, about 5-7 minutes. Add chicken and increase heat to medium. Cook and stir until chicken is cooked through, about 4-6 minutes. Stir in lemon juice, lemon peel, and parsley and serve immediately over hot cooked rice or a rice pilaf.
