Crockpot Chicken with Sun Dried Tomatoes

Using plain sun dried tomatoes, not those packed in oil, reduces the fat in this dish. The tomatoes will soften in the cooking liquid.

Prep Time: 20 minutes

Cook Time: 8 hours

Total Time: 8 hours, 20 minutes

Ingredients:

  • 3 oz. pkg. sun dried tomatoes (not oil packed)
  • 4 boneless, skinless chicken breasts
  • 1/4 cup chicken broth
  • 1 tsp. dried basil leaves
  • 3 cups sliced mushrooms
  • 1 onion, chopped
  • 2 oz. can sliced black olives, drained

Preparation:

Slice tomatoes into julienne strips. Combine with remaining ingredients in a 3-4 quart crockpot. Cover crockpot. Cook on LOW for 8-9 hours or until chicken is thoroughly cooked and no longer pink in center. Serve with hot cooked polenta or rice. 4 servings

My biggest complaint about crockpot recipes is that the meat inevitably ends up swimming in juice. The beautiful thing about this particular recipe is that the tomatoes soak up a lot of the extra juices and the resulting dish is moist and delicious. I ate leftovers on flatbread with melted mozzerella. So yummy. Thanks for the great recipe!
