Chicken Pesto in Puff Pastry is an easy five ingredient recipe you can dress up many ways. Add some cooked crisp bacon, a few minced sun-dried tomatoes, or caramelized onion to the filling. Yum.

Prep Time: 25 minutes

Cook Time: 20 minutes

Ingredients:

  • 5 boneless, skinless chicken breasts, cubed
  • 2 tablespoons butter
  • 1/2 (7-ounce) package basil pesto
  • 2 (3-ounce) packages cream cheese, softened
  • 1 (17-ounce) package puff pastry (two sheets) thawed
  • 1 egg, beaten

Preparation:

Preheat oven to 400 degrees F. In medium skillet, cook cubed chicken in butter until almost cooked. Place in medium bowl and add pesto and cream cheese; mix until blended.

Gently roll out puff pastry sheets on lightly floured surface to 12" squares. Cut each into three 4" x 12" rectangles. Divide chicken mixture among the six rectangles, leaving one half of the rectangle free. Fold free half of the rectangle over the chicken filling to form 4" x 6" bundles; press with fork to seal edges. Place bundles on ungreased cookie sheet with sides. Brush with beaten egg.

Bake the bundles for 20-30 minutes or until deep golden brown. Remove to wire racks and let cool for 15 minutes before serving; the filling gets very hot! Serves 6
