You can use any flavor of your favorite salsa in this super easy and delicious recipe. You can use any type of salsa you'd like; I like the complex sweet and hot flavor of fruit salsas in this recipe. Even smaller grocery stores are carrying fun flavors of salsa. I love to serve it with Chili Rice Casserole to soak up the wonderful sauce.

Prep Time: 10 minutes

Cook Time: 6 hours

Total Time: 6 hours, 10 minutes

Ingredients:

  • 3 lbs. boneless, skinless chicken thighs
  • 16 oz. jar peach salsa

Preparation:

Combine in a 3-4 quart crockpot and cook on low for 6-8 hours, until chicken is tender and thoroughly cooked.

You can leave the lid off the crockpot and cook it on high for the last 30-45 minutes to thicken if you'd like, or mix 2 tablespoons cornstarch with 1/4 cup water and add that; cook 20-30 minutes longer on low.

This can also be made with chicken breasts; cook on low for 5-6 hours until the chicken is done. Serves 6-8

This was an awesome recipe, quick, simple, and delicious!!! I used a peach mango salsa, but will try it with any number of other flavors. I also used chicken breasts instead of thighs, which stayed wonderfully moist and juicy. I prepared a mixture of rice and lentils to put the chicken and salsa juices over and they worked very well together. Fresh steamed green beans as the vegetable and my family had a delicious meal!
