Honey Chicken Kabobs

You can marinate the chicken up to 12 hours; the longer it marinates, the more flavorful the finished dish will be.

Prep Time: 25 minutes

Cook Time: 10 minutes

Ingredients:

  • 1-1/2 pounds boneless, skinless chicken breasts
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 red bell pepper
  • 1 green bell pepper
  • 1/2 pound asparagus
  • 1/2 pound mushrooms
  • 1 zucchini or yellow summer squash

Preparation:

Cut chicken into 1-1/2" pieces. In medium bowl, combine soy sauce, honey, lemon juice, olive oil, oregano, salt, and pepper and mix well. Add chicken pieces, turn to coat. Cover and refrigerate for 6-12 hours.

When ready to cook, prepare and preheat grill. Drain chicken, reserving marinade. Cut peppers into 1-1/2" pieces. Cut asparagus into 2" long pieces. And slice zucchini into thick slices.

Thread chicken and vegetables onto metal skewers. Place on grill and cook 6" from medium coals, turning frequently and brushing with marinade, for 10-12 minutes or until chicken is thoroughly cooked and vegetables are crisp-tender. Serves 4-6
