Raspberry Glazed Chicken

Raspberry Glazed Chicken

Linda Larsen
This super simple four ingredient sauce is brushed onto chicken breasts, then grilled to glazed perfection. You could use this recipe with peach jam and peaches, or strawberry jam and chopped strawberries too.

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Yield: 6-8 servings

  • 2/3 cup raspberry preserves
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • white pepper and salt to taste
  • 8 boneless, skinless chicken breasts
  • 2 cups fresh raspberries

Prepare and preheat grill. Brush rack with vegetable oil. Mix raspberry preserves, mustard, honey, lemon juice, pepper, and salt. Place chicken on grill, cover and cook for 8-9 minutes per side, brushing frequently with the jam mixture, until chicken registers 160 degrees F on an instant read thermometer. Discard remaining honey mixture and serve chicken with the fresh raspberries.

Great summer dish!, Guest Drawers

I marinated my chicken in Raspberry Walnut Vinaigrette first, then added the glaze. Broiled in the oven for seven minutes. Perfection! Great summer dish. Made a side salad with romaine, dried cranberries and sliced almonds. It made a good pair.
