If you like your food really spicy, add a small drained can of chopped green chilies along with the tomatoes.

Ingredients:
- 1 Tbsp. olive oil
- 1 lb. chicken tenders
- 1 onion, chopped
- 8 oz. pkg. rice and bean mix
- 14 oz. can diced tomatoes with green chilies
- 1 cup water
- 8 oz. can tomato sauce
Preparation:
Heat oil in a large skillet over medium-high heat. Add chicken tenders and onion, cook and stir 3 to 5 minutes. Reduce heat to medium, add rice and bean mix, tomatoes and green chilies, water, and tomato sauce. Stir well and bring to a boil. Cover skillet, reduce heat, and simmer for 15 minutes, until rice and beans are tender and chicken is thoroughly cooked. Serves 4
