Broccoli Chicken Brown Rice Casserole

This simple dish really has a lot of flavor, and it's so easy to put together. It bakes while you prepare a salad or dessert, or just relax.

Prep Time: 20 minutes

Cook Time: 1 hour

Total Time: 1 hour, 20 minutes

Yield: 6-8 servings


  • 2-1/2 lbs. chicken drumsticks
  • 1/3 cup flour
  • salt and pepper to taste
  • 3 tablespoons olive oil
  • 1 cup uncooked long grain rice
  • 1 onion, minced
  • 2 cloves garlic, minced
  • 2 cups sliced carrots
  • 2-1/2 cups chicken broth, heated to boiling
  • 3 tablespoons butter, melted
  • 1/2 cup grated Parmesan cheese


Preheat oven to 350 degrees. Combine flour, salt, and pepper in shallow plate. Roll drumsticks in flour mixture to coat. Heat oil in large skillet and brown drumsticks over medium heat, turning several times, about 5-6 minutes. Meanwhile, place the rice, more salt pepper, onion, and garlic in a 13x9" glass baking dish. Add carrots and hot chicken broth along with melted butter.

Arrange browned chicken drumsticks on top of the rice mixture and sprinkle with cheese. Cover and bake at 350 degrees for 45 minutes. Then uncover and bake for 15-20 minutes longer until chicken is thoroughly cooked and rice is tender.

I loved this recipe it was very easy and sooo good !! I didn't think it was going to turn out but it did & instead of using chicken broth I used mushroom soup because I had none and it turned out soo great next time I will try with broth.
