Lemon Basil Drumsticks

You could use just about any fresh herb instead of the basil in this easy recipe. Some thyme leaves or a fresh sage leaf would be delicious.

INGREDIENTS:

  • 8 chicken drumsticks
  • 1/2 cup fresh basil leaves
  • 1/4 cup lemon juice
  • 3 Tbsp. butter, melted
  • 1 Tbsp. honey
  • 1 tsp. grated lemon peel
  • 1/4 tsp. garlic salt
  • 1/8 tsp. pepper
  • 1/2 tsp. dried basil leaves

PREPARATION:

Preheat oven to 350 degrees. Gently loosen skin from chicken drumsticks, being careful not to tear skin. Place basil leaves between skin and flesh or drumsticks and smooth skin back into place.

Combine lemon juice, butter, honey, lemon peel, garlic salt, pepper, and dried basil leaves in a small bowl and stir well to blend. Place chicken pieces in a single layer in 13x9" glass baking dish and brush with half of the sauce.

Bake drumsticks at 350 degrees for 30 minutes. Then turn drumsticks over and brush with sauce again. Bake for 20-30 minutes longer, brushing with sauce every 10 minutes, until juices run clear and chicken is thoroughly cooked. Discard any remaining sauce before serving. 4 servings
