Ingredients:
- 1 cup brown rice
- 14 oz. can ready to serve chicken broth
- 1/2 cup orange juice
- 1/3 cup dried cranberries
- 1/3 cup dried fruit bits
- 1 onion, finely chopped
- 8 drumsticks
- 2 Tbsp. orange juice concentrate, thawed
- 1/4 tsp. onion salt
- 1 tsp. dried thyme leaves
Preparation:
Combine rice, broth, orange juice, fruits, and onion in medium saucepan and bring to a boil. Boil for 1 minute, then pour into prepared pan. Place drumsticks on top of rice mixture. Brush drumsticks with orange juice concentrate and sprinkle with onion salt and thyme.
Cover pan and bake at 425 degrees for 75-85 minutes until chicken is thoroughly cooked, juices run clear, and rice is cooked. Let stand 5 minutes before serving. 4 servings
