Apple Cinnamon Glazed Chicken

If you love cinnamon, increase the amount of cinnamon in this recipe to one teaspoon. This delicious low fat entree is delicious served with grilled asparagus and French bread.

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: Serves 4-6

Ingredients:

  • 2 Tbsp. applesauce
  • 1/3 cup apple jelly
  • 1 Tbsp. honey
  • 2 Tbsp. Dijon mustard
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 4 boneless, skinless chicken breast halves

Preparation:

Prepare and preheat grill. In small bowl, combine all ingredients except chicken breasts and stir to combine. When ready to cook, oil grill rack. Brush apple mixture on chicken and place on grill 4-6" from medium coals. Cook 15-20 minutes, turning occasionally and brushing frequently with jelly mixture, until chicken is no longer pink and internal temperature reaches 170 degrees F. Discard any remaining jelly mixture.

I currently do not have a grill, so I mixed the glaze exactly as directed and then put the chicken on a cookie sheet and baked at 400 degrees for 20 minutes. I used chicken that was pre-cut into strips. It was delicious. I also made carrots with butter and brown sugar as a side dish - it complimented the chicken very well. I think a mildly flavored rice would also be a good side dish - maybe Rice Pilaf, something that won't overpower or cancel out the taste of the chicken?
