Fruit and Chicken Pilaf

You could easily substitute ground turkey or pork for the ground chicken in this simple, healthy recipe.

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 Tbsp. olive oil
  • 1/2 lb. ground chicken
  • 1/4 cup chopped green onions
  • 2 cups water
  • 6 oz. pkg. quick cooking long grain and wild rice mix
  • 1/2 cup dried cherries
  • 1/2 cup chopped dried apricots
  • 1/8 tsp. ground nutmeg

Preparation:

Heat olive oil in large skillet; add chicken and onions and cook and stir until chicken is no longer pink. Stir in water and seasoning packet from rice mix and bring to a boil. Reduce heat to low and stir in remaining ingredients. Cover and simmer for 5-6 minutes until rice is tender and mixture is hot. 4 servings
