Crockpot Honey Chicken with Dried Fruit

I love the combination of chicken with dried fruit. This easy recipe uses just five ingredients. The dried fruit combines with the honey, broth, and vinegar to make a delicious chutney that pairs perfectly with the chicken.

Prep Time: 15 minutes

Cook Time: 9 hours

Total Time: 9 hours, 15 minutes

Yield: 8 servings

Ingredients:

  • 8 boneless, skinless chicken thighs
  • 1/2 tsp. ground ginger
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup mixed dried fruit pieces
  • 1/2 cup honey
  • 1/3 cup chicken broth
  • 2 tablespoons apple cider vinegar
  • 1 onion, chopped

Preparation:

Place all ingredients in 4-5 quart slow cooker. Cover and cook on low for 8-9 hours until chicken is tender and thoroughly cooked. Serve over hot cooked rice or egg noodles.

Do not use bone-in pieces of chicken because the recipe may not work. Bone-in dark meat chicken cooks very differently from boneless in the crockpot.

This is a great recipe; tastes like sweet and sour chicken with a kick. I added some minced fresh gingerroot along with the dried ginger powder. The kids loved it!
