Honey Mustard Chicken Thighs

This quick and easy recipe is so simple to make. Serve it with hot cooked couscous and a green salad.

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 Tbsp. butter
  • 1 lb. pkg. boneless, skinless chicken thighs
  • 4 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 Tbsp. honey
  • 1 Tbsp. mustard
  • 1/2 tsp. dried thyme leaves
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Preparation:

Melt butter in heavy skillet over medium heat. Add chicken and carrots and cook for 8-10 minutes until chicken is browned on bottom. Turn chicken and add remaining ingredients. Cover pan and cook over medium heat, stirring occasionally, for 10-13 minutes until chicken is thoroughly cooked. Serve over hot cooked rice or couscous.
