Ingredients:
- 1 Tbsp. butter
- 1 lb. pkg. boneless, skinless chicken thighs, cut into strips
- 4 carrots, sliced OR 1 pkg. baby carrots
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 Tbsp. honey
- 1 Tbsp. mustard
- 1/3 cup chicken broth
- 1/2 tsp. dried thyme leaves
- 1/2 tsp. salt
- 1/8 tsp. pepper
Preparation:
Cover pan and bring to a simmer. Lower heat to low and cook, stirring occasionally, for 7-9 minutes until chicken is thoroughly cooked and vegetables are tender. Serve Honey Mustard Chicken Thighs over hot cooked rice or couscous.
