Honey Mustard Chicken Thighs

This quick and easy recipe for Honey Mustard Chicken Thighs is so simple to make. Serve it with hot cooked couscous and a green salad.

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: 4 servings

Ingredients:

  • 1 Tbsp. butter
  • 1 lb. pkg. boneless, skinless chicken thighs, cut into strips
  • 4 carrots, sliced OR 1 pkg. baby carrots
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 Tbsp. honey
  • 1 Tbsp. mustard
  • 1/3 cup chicken broth
  • 1/2 tsp. dried thyme leaves
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Preparation:

Melt butter in heavy skillet over medium heat. Add chicken, carrots, and onions and cook for 4-5 minutes until chicken is browned on bottom. Meanwhile, in small bowl combine garlic, honey, mustard, chicken broth, thyme, salt, and pepper. Turn chicken and add honey mixture.

Cover pan and bring to a simmer. Lower heat to low and cook, stirring occasionally, for 7-9 minutes until chicken is thoroughly cooked and vegetables are tender. Serve Honey Mustard Chicken Thighs over hot cooked rice or couscous.

Would make this again, with modifications, Guest NerakK

Chicken pieces did not brown, so next time would add the vegetables after the browning step. Added only two Tbs. of honey, and it was sweet enough for us. Also added a Tbs. of lime juice to add a little extra tang. Good one-dish quick-and-easy family dish.
