Minted Chicken Breasts with Cucumber Sauce

These tender chicken breasts are marinated in a spicy yogurt mixture, which adds a velvety texture to the meat, then served with a simple yogurt, cucumber, and mint sauce.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup plain yogurt
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 teaspoon cayenne pepper
  • 1-1/2 cups plain yogurt
  • 1 cucumber, peeled, seeded, and chopped
  • 5 fresh mint leaves, minced

Preparation:

Sprinkle chicken with salt, pepper, and cayenne pepper, and spread on both sides with 1/2 cup yogurt. Cover and refrigerate for 1-2 hours. In a small bowl, combine 1 cup yogurt with cucumber and mint; mix well and refrigerate. When ready to eat, broil chicken 6" from heat for 4-5 minutes on each side until browned and thoroughly cooked. Serve with cucumber sauce. Serves 4
