This simple dish is rich and delicious; serve it with hot cooked rice.

Ingredients:
- 1 apple, peeled, cored, chopped
- 1 onion, chopped
- 1 Tbsp. butter
- 1 Tbsp. olive oil
- 1 Tbsp. curry powder
- 10 oz. can condensed cream of chicken soup
- 1 cup heavy cream
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 8 boneness, skinless chicken thighs, cut into 1" pieces
- 3/4 cup sliced mushrooms
- 1 tsp. smoked paprika
Preparation:
In heavy skillet, cook apple and onion in butter and olive oil until tender, 4-5 minutes. Stir in curry powder and simmer for another 2-3 minutes. Add soup, cream, salt and pepper and stir. Bring to a simmer. Add chicken to pan along with mushrooms and paprika. Bring to a simmer and cook for 20-30 minutes, stirring occasionally, until chicken is thoroughly cooked. Serve over hot cooked rice.
