Chicken, that staple of so many busy cooks' kitchens, can actually become boring after awhile. But never fear - this collection of delicious chicken recipes from around the world all use boneless, skinless chicken breasts and add fabulous flavors. None of these recipes claim to be 'authentic', but all remind me of different cuisines and all are quick and easy.

Since chicken is so mild and tender, you can use it in just about any cuisine and it will happily adapt. Be sure to read How to Cook Boneless, Skinless Chicken Breasts for the best information about getting the best results. Then have fun!

Substitute just about any ingredient for any other. You can do that in cooking recipes, you know! Be sure to write down the changes you make when you hit on a winner. And, for some family table discussion, you might want to have a conversation about the country that your recipe comes from.

  • Chicken Etouffee
    When I was in New Orleans a few years ago, I had the best Crawfish Etouffee in a restaurant in the French Quarter. This recipe is loosely based on that wonder.

    Straight from Russia! (Well, not really.) This simple recipe is a variation on the classic. If you'd prefer to make the original, try Chicken Kiev.
  • Tandoori Chicken
    This Indian yogurt marinade, filled with spices, make chicken breasts velvety smooth and so flavorful.
  • Chicken Paprikash
    From Hungary, this fabulous and hearty dish is delicious served over mashed potatoes or hot rice.
  • Cheese Stuffed Chicken
    Feta cheese and olives add a Greek flair to this simple, delicious recipe.
  • Chicken and Wild Rice Bake
    This super simple recipe uses a wild rice mix. Wild rice is a flavorful seed, native to Minnesota, that is really delicious with the best tender texture.
  • Minted Chicken Breasts with Cucumber Sauce
    A cooling sauce accompanying spicy chicken is typical of Middle Eastern cuisine.
  • Spanish Crockpot Chicken
    Use whole boneless skinless chicken breasts in place of the cubed thighs in this recipe. Artichokes, olives, and oregano give this recipe a Spanish flair.
  • Crockpot Orange Curried Chicken
    Curry is a complex blend of spices from India. This fabulous recipe is my husband's favorite.
  • Mexican Chicken
    This super easy microwave recipe uses just five ingredients. The recipe serves two; you can double or triple it, but be sure to increase the cooking time by 1-1/2 to 2.
  • German Chicken
    Hearty German flavors and ingredients make chicken a truly special dish in this quick and easy main dish recipe.
  • Tex Mex Grilled Chicken
    Cooked on your indoor grill, all the Mexican spices flavor this chicken to perfection. I love the combination of the hot, juicy chicken with cold salsa.
  • Fake Chicken Cordon Bleu
    This French recipe is a nice fake-out! The flavors are superb, and the recipe is much easier than classic Cordon Bleu.
  • Mexican Peacocks
    I think this is 'Mexican' because of the avocado stuffing. At any rate, I adore this recipe.
  • Chicken with Orange Salsa
    This sunny recipe makes me think of California! The combination of sweet oranges and spicy jalapeno is superb.
  • Chicken with Pineapple
    And cashews! This recipe reminds me of the tropics, especially Hawaii. Yum.
  • Chicken Ravioli Cacciatore
    Cacciatore is a classic Italian recipe. This simple variation is delicious and easy.
  • Crockpot Thai Chicken
    Substitute chicken breasts for the thighs in this recipe and cut the cooking time to 6-7 hours. Lime juice, gingerroot, and peanut butter make a wonderful sauce for this easy chicken dish.
  • Chicken with Peppers Stir-Fry
    Stir-frying originated in Asian countries. This is one of the best ways to cook chicken.
  • Chicken Scampi
    I know that scampi is Italian, but I always think of it as Floridian, because I had the best shrimp scampi of my life in a restaurant near Bonita Springs.
  • Chicken Lo Mein
    This excellent and super healthy recipe uses ramen soup mix for the flavorings.
