This simple five ingredient stew tastes much more complex than the sum of its parts; partly because of the ingredient combination and partly because it cooks all day in your slow cooker.

Ingredients:
- 6 boneless, skinless chicken thighs
- 1 green bell pepper, cut into 1" pieces
- 1 onion, chopped
- 15 oz. can garbanzo beans, drained
- 20 oz. jar pasta sauce
- 1 tsp. dried Italian seasoning
- 1/2 tsp. garlic powder
- Salt and pepper to taste
Preparation:
Combine all ingredients in 4 quart crockpot and stir to blend. Cover and cook on low for 6-7 hours, until chicken is thoroughly cooked. Remove chicken from crockpot and shred; stir back into crockpot. Serve topped with feta cheese and lime zest, if desired.
