Orange Chicken Stir-Fry

This easy recipe is packed full of flavor. And because you use frozen peas and cashews, there's no chopping. Dinner will be on the table in 10 minutes.

Prep Time: 15 minutes

Cook Time: 8 minutes

Total Time: 23 minutes

Yield: 4 servings

Ingredients:

  • 2 Tbsp. oil
  • 4 boneless, skinless chicken breasts, cut into thin strips
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 3/4 cup orange juice
  • 2 Tbsp. soy sauce
  • 1 Tbsp. cornstarch
  • 2 cups frozen baby peas, thawed
  • 1/2 cup cashew pieces

Preparation:

Heat oil in heavy skillet or wok. Add chicken, salt and pepper. Stir fry until chicken is cooked, 3-4 minutes. Combine orange juice, soy sauce, and cornstarch in small bowl. Add to chicken in skillet or wok along with frozen peas.

Stir fry 2-4 minutes until sauce thickens. Stir in cashew pieces and serve over hot cooked rice or noodles.

I never learned to cook, so helpful recipes like this are a God-send. The good ones I keep in a file, and grade them if they're keepers. This one earned an A+! I made this last night for my husband and (grown) stepson. They each ate 3 servings! I had to make more rice, and they sat there, waiting for it, drooling. This has never happened to me! It was fabulous--both the praise and the dinner. They simply raved about it. Now they think I can cook! Whatever am I to do for the rest of the week?!
