Crockpot Black Bean Chili

This easy Crockpot Black Bean Chili is made in the slow cooker; it cooks all day so you can get your work done!

Prep Time: 15 minutes

Cook Time: 8 hours

Total Time: 8 hours, 15 minutes

Yield: 6-8 servings

Ingredients:

  • 1-1/2 cups vegetable broth
  • 1 tsp. dried oregano leaves
  • 1 tsp. dried thyme leaves
  • 3 Tbsp. tomato paste
  • 1 tsp. ground cumin
  • 1 Tbsp. chili powder
  • 1/8 tsp. cayenne pepper
  • salt and black pepper to taste
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 (4 oz.) cans chopped green chiles, undrained
  • 3 (15 oz.) cans black beans, rinsed and drained
  • 2 (14 oz.) cans diced tomatoes, undrained
  • 2 red bell peppers, chopped
  • 1/4 cup chopped fresh cilantro
  • 1-1/2 cups shredded Cheddar cheese
  • 1 cup sour cream

Preparation:

Combine all ingredients except cilantro and cheese in 3-4 quart slow cooker. Cover and cook on low for 8 hours. Stir in cilantro just before serving. Serve with Cheddar cheese and sour cream for topping.
