For a truly spectacular, but make ahead entree, Mexican Peacocks are hard to top. Tender chicken breasts are pounded until thin, then wrapped around a garlic and avocado buttery filling, coated with bread crumbs, then fried and baked to creamy perfection. My mouth is watering just thinking about them! They make this special holiday dinner menu simply spectacular.

Serve this special entree with some special side dishes. Special Green Beans are perfect; fresh, yet dressed up with sweet grape tomatoes. And Easy Sourdough Bread is delicious; serve it warm from the oven, or slice the bread and treat it as garlic bread.

And Peanut Parfait Dessert, a rich and creamy layered dessert with brownies, whipped cream, and peanut butter, is the perfect finish to this rich and elegant meal. Light the Christmas tree, lay a fire in the fireplace, and set your table with sparkling crystal and silver. Enjoy.

  • Roasted Corn and Lobster Dip
    This elegant dip is so delicious; roasting corn brings out its sweetness. You could also use cooked shrimp or crab meat instead of the lobster if you'd like.
  • Mexican Peacocks
    Buy the avocado a couple of days before your dinner so it can soften and ripen to creamy perfection.
  • Tomato Green Beans
    You could also use a combination of green beans and wax beans if you'd like. Also think about sprinkling the finished dish with some chopped salted cashews.
  • Strawberry Melon Salad
    Really beautiful strawberries can be found at this time of year. If you can't find them, just use more melon balls.
  • Easy Sourdough French Bread
    You can slice this bread and make Toasted Parmesan Garlic Bread if you'd like.
  • Peanut Parfait Dessert
    You can use a brownie mix, or make your own brownies, which are very easy. For this menu, I'd serve this dessert chilled, not frozen.
