Salmon Salad Sandwiches are a delicious and rich no cook recipe to make when it's really hot outside. The filling is also wonderful to keep in the fridge; let hungry teenagers help themselves! (The other recipe in the picture is Rosy Red Coleslaw.)

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: 4-6 servings

Ingredients:

  • 1 (15-ounce) can red sockeye salmon, drained
  • 1 red bell pepper, chopped
  • 2/3 cup shredded carrot
  • 1/2 cup mayonnaise
  • 3 tablespoons Dijon mustard
  • 1/3 cup shredded Parmesan cheese

Preparation:

Combine all ingredients in medium bowl and mix well. Use immediately or cover and refrigerate until ready to use. Spread between two pieces of bread, place in pita breads, or use to fill hot dog buns.
