Chicken Pesto Sandwiches are a quick and easy, delicious sandwich recipe you can eat immediately or freeze to tuck into lunchboxes later.
Prep Time: 15 minutes
Ingredients:
- 1 (8-ounce) package cream cheese, softened
- 1/4 cup ranch salad dressing
- 1/3 cup Spinach Pesto or purchased pesto
- 1/4 cup grated Parmesan cheese
- 1-1/2 cups chopped cooked chicken
- 10 slices whole wheat bread
- 3 tablespoons butter, softened
Preparation:
In medium bowl, combine cream cheese and ranch dressing; beat until smooth. Stir in pesto and cheeses, then add chicken.
Spread one side of each slice of bread with the softened butter. Make sandwiches with the bread, buttered side in, and the filling. Serve immediately, or chill for 4 hours, or wrap and freeze.
If frozen, let thaw in an insulated lunchbox with a frozen gel pack. 5-8 servings
