Tex-Mex Pita Sandwiches are a delicious make ahead sandwich recipe perfect for the freezer. Adjust the spice level to your child's taste.
Prep Time: 20 minutes
Ingredients:
- 1 cup frozen meatless crumbles (TVP), thawed
- 1 (15-ounce) can refried beans
- 1 cup salsa
- 1 (15-ounce) can kidney beans, rinsed and drained
- 1-1/2 cups queso fresco cheese
- 8 whole wheat pita breads, halved
- 3 cups lettuce
Preparation:
In medium bowl, combine crumbles, refried beans, and salsa and mix well. Stir in kidney beans and cheese. Spoon mixture into pita breads. Top with lettuce and serve immediately, or omit lettuce, wrap sandwiches, and freeze.
Place in insulated lunchboxes with gel pack and let thaw until lunchtime. You can pack a small bag of shredded lettuce for your child to add to the sandwich if you think they'll eat it.
This recipe can be made spicier by including a minced jalapeno pepper or two, or adding some chili powder. Yields 16 sandwiches
