Freezable Sandwich Filling Recipes

School days are so busy it's hard to throw together an outfit, let alone a delicious and healthy lunch, so turn to freeze-ahead sandwich recipes.

Make these sandwiches ahead of time and freeze them, well wrapped and labeled so you know what you have, then just pick one out of your freezer on school days and tuck into insulated lunch boxes. The lunch boxes do have to be insulated and make sure you have tucked a frozen gel pack into the box. That just keeps the temperature below 40 F, so the sandwiches will thaw in time for lunch but will still be safe to eat.

    This excellent sandwich is full of nutrition and flavor. If you are going to freeze this sandwich, make sure that you don't freeze it with the lettuce and tomato. Pack those separately and tuck them into the lunch box.

Let the Kids Be Involved

One of the best ways to ensure that the lunch you have made will be eaten and not traded away is to have your child help you make it. This is a great opportunity to teach them some kitchen (and food safety) skills at the same time. Children have a propriety attitude about their own creations. Just have your little one mix the filling or assemble the sandwiches and the odds that it will end up in their tummies will increase.
