This simple soup is perfect for a hot summer night. Serve it in white soup bowls for a cooling effect.
Prep Time: 20 minutes
Ingredients:
- 1 garlic clove, minced
- 2 green onions, chopped
- 1/2 tsp. salt
- dash white pepper
- 2 Tbsp. olive oil
- 1-1/2 cups plain yogurt
- 1/2 cup buttermilk
- 1 Tbsp. lemon juice
- 1/2 cup chopped walnuts
- 1/2 cup cracked ice
- 2 cucumbers, peeled, seeded, and sliced
Preparation:
In blender or food processor, combine all ingredients and blend or process, using on and off function, until soup is of desired consistency. You may need to add more cracked ice. This soup can be chilled for a few hours before serving, or served immediately. 4 servings
