Mint Pesto

Drizzle this nice little sauce over ice cream, fold it into brownie batter before baking, and use it to top fresh fruits for a healthy summer dessert.
Prep Time: 10 minutes
Cook Time: 5 minutes
Ingredients:
  • 1/2 cup sugar
  • 1/2 cup water
  • 2 cups packed mint leaves
  • 1/2 cup slivered almonds
  • 2 Tbsp. honey
  • 1/4 tsp. salt
Preparation:
In a small saucepan, combine sugar and water and bring to a boil. Boil until sugar dissolves, stirring constantly. Set aside to cool for 30 minutes.

In food processor, combine mint with almonds; process until finely chopped. With the motor running, add the cooled sugar syrup and the honey; blend until a paste forms. You may need to add more water to reach desired consistency. Store in the refrigerator up to 3 days, or freeze up to 3 months.
