Nothing beats this fresh, sweet and tart salsa when peaches are at their ripest. Serve it with some grilled fish for a fabulous combination.
Prep Time: 20 minutes
Ingredients:
- 2 peaches, peeled, pitted, and chopped
- 1/2 cup chopped green onions
- 1/2 tsp. red pepper flakes
- 1/4 tsp. salt
- dash pepper
- 2 Tbsp. chopped fresh cilantro
- 2 Tbsp. chopped red bell pepper
- 1 Tbsp. lime juice
Preparation:
Combine all ingredients in medium bowl and mix to blend. Cover and refrigerate 1-2 hours to blend flavors. Serve with grilled fish or chicken, or with taco chips for dipping.
