Krumkakke is a special Norwegian cookie. A rich batter is poured onto an electric Krumkakke iron, then the iron is closed and the cookie bakes until crisp. You can leave the little wafers flat, or roll them and fill with any filling, from whipped cream to chocolate mousse.

Prep Time: 10 minutes

Cook Time: 1 minute

Total Time: 11 minutes

Yield: 36 krumkakke

Ingredients:

  • 3 eggs, beaten
  • 1/2 cup brown sugar
  • 1/3 cup sugar
  • 1/2 cup butter, melted and cooled
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 1-1/2 teaspoons vanilla
  • 1-3/4 cups flour
  • 1/2 teaspoon cardamom, if desired
  • Pinch salt
  • 1 teaspoon unsalted butter, melted

Preparation:

In medium bowl, beat eggs just until combined. Add sugars and beat well, then beat in butter.

Stir in cream, milk, and vanilla. Then beat in flour, cardamom, and salt until smooth.

Heat a krumkakke iron as directed. Brush with the melted unsalted butter just for the first cookie. Put about a tablespoon of the batter onto the iron, close it, and latch. Cook for 30 to 60 seconds or as directed. The krumkakke should be very light golden brown.

Remove wafer from iron and cool on wire rack, or immediately roll around a metal or wooden rod. Cool completely on wire racks. Serve, or fill with any filling.
