Apple Nut Squares

This fabulous and simple cake is like a cross between a bar cookie and a sheet cake. Use tart apples in this recipe; Granny Smith apples, Cortlandts, and Jonathans.

Prep Time: 25 minutes

Cook Time: 50 minutes

Ingredients:

  • 3 eggs
  • 1-3/4 cups sugar
  • 1 cup oil
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1-1/2 teaspoons cinnamon
  • 2 cups diced peeled apples
  • 1 cup chopped pecans

Preparation:

Preheat oven to 325 degrees F. In large bowl, beat eggs until light and thick. Add sugar and beat well. then stir in oil and vanilla. Sift together flour, salt, baking soda, and cinnamon and stir into batter. Then add apples and nuts.

Pour into greased 13x9" pan and bake for 50-60 minutes or until cake is deep golden brown and pulls away from sides of pan. Cool completely. Can frost with Cream Cheese Frosting, using apple juice in place of the cream.
