Caramel Roll Out Cookies

The flavor of these cookies is excellent; more interesting than butter cookies, but a much milder flavor than gingerbread.

Prep Time: 25 minutes

Cook Time: 8 minutes

Ingredients:

  • 2 cups flour
  • 1/2 tsp. salt
  • 1 cup brown sugar
  • 13 tablespoons butter, softened
  • 1/2 cup almond paste
  • 1 Tbsp. milk
  • 1 tsp. almond extract

Preparation:

Preheat oven to 350 degrees F. Combine all ingredients in large bowl and beat with mixer until combined. Chill dough if necessary until firm.

On floured surface, with rolling pin in stockinette or a silicone rolling pin roll out dough to 1/8" thickness. Cut with cookie cutters and place on ungreased cookie sheets.

Bake at 350 degrees F for 8-10 minutes until set and very light golden brown around edges. Cool for 3-4 minutes before removing from cookie sheets and cooling completely on wire racks. Frost and decorate as desired. 5 dozen cookies
