I love using chocolate chips in these crisp cookies; raisins are a disappointment to me when used in cookies.

Yield: 18 cookies
Ingredients:
- 1 cup peanut butter
- 1 cup honey
- 1/2 cup oil
- 1 tsp. vanilla
- 2 eggs
- 1 cup flour
- 1 cup whole wheat flour
- 1/2 cup oat bran OR oatmeal
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/8 tsp. salt
- 1 cup crisp rice flake cereal (like Special K)
- 1 cup raisins or semisweet chocolate chips
Preparation:
Preheat oven to 350 degrees. Combine peanut butter, honey, oil, vanilla and eggs in a large bowl and beat well until smooth. Add flours, oat bran, baking powder and salt and mix until combined. Stir in cereal and raisins. Drop by tablespoons onto cookie sheets, making 12 cookies per sheet. Bake at 350 degrees for 8 to 11 minutes until golden. Cool 1 minute on cookie sheets, then remove to wire rack to cool.
