Date Oatmeal Cookies

These chewy and sweet cookies are great for lunchboxes or filling that cookie jar. You can make these cookies by rolling the dough into balls, or increasing the milk to 1/3 cup and making a soft drop cookie.

Prep Time: 25 minutes

Cook Time: 10 minutes

Ingredients:

  • 1/2 cup shortening
  • 1/4 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1 cup quick oats
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped dates

Preparation:

Preheat oven to 375 degrees F. In large mixer bowl, combine shorteing and butter and mix well. Add sugar and beat until combined. Stir in eggs and mix. Add milk and vanilla and beat. (If you use 1/3 cup milk, you'll get a softer cookie that's dropped onto cookie sheets and baked. 1/4 cup of milk will result in a firmer cookie.)

Add flour, oats, soda, salt, and cinnamon and mix until a dough forms. Stir in dates and nuts. Drop dough onto greased cookie sheets and bake at 375 degrees F for 10-11 minutes until set and light golden brown. Let cool on cookie sheets for about a minute, then remove to wire racks to cool.
